Games initially reside on your HDD/SDD and are being (gradually) loaded into the main memory. Some games are completely loaded into the RAM, when the game starts; others are loading even while the game is running. So it basically depends on the game.
Thing is, though, the SSD performance bump is crucial to the operating system. Even if the game is fully loaded into the memory, sometimes operating system routines will be loaded from the HDD. So in any case SSD's are preferable.

There's also that — if there is enough physical memory (RAM) — the system is never forced to rely on virtual memory (HDD).

Oh, and yes, SSD's are really that good.
Sadly, performance comes at the cost of longevity.
